  • 2 tbsp Southwest seasoning
  • 2 tbsp olive oil
  • 1 cup bell peppers (sliced)
  • ½ cup red onion (sliced)
  • 1 can black beans (15 oz, rinsed)
  • 1 cup corn (frozen or canned)
  • 2 cups cooked rice or quinoa
  • Juice of 1 lime
  • ¼ cup cilantro (optional)
  • ½ cup sour cream or Greek yogurt (optional)
  • ½ cup salsa or pico de gallo (optional)

Instructions

  1. Preheat a skillet over medium heat and add olive oil.
  2. Season chicken breasts with Southwest seasoning and cook in the skillet until golden brown and cooked through, about 6-7 minutes per side. Remove and slice.
  3. In the same skillet, sauté sliced bell peppers and red onion until softened, about 5 minutes.
  4. Add rinsed black beans and corn to the skillet; stir until heated through.
  5. Prepare rice or quinoa according to package instructions.
  6. Combine sliced chicken with veggies in the skillet, mixing well.
