Ingredients

  • 3 boneless skinless chicken breasts (about 1 lb)
  • 4 cups chopped green cabbage
  • 1 cup grated carrots
  • 1 cup sliced bell peppers (mixed colors)
  • ½ cup sliced green onions
  • 2 tbsp sesame oil
  • ¼ cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 2 tbsp toasted sesame seeds

Instructions

  1. Marinate chicken breasts in soy sauce and sesame oil for 15 minutes.
  2. Cook marinated chicken in a skillet over medium-high heat for about 6-7 minutes per side until fully cooked. Allow to cool and slice.
  3. While the chicken cools, chop the cabbage, grate the carrots, and slice the bell peppers and green onions.
  4. In a bowl, whisk together soy sauce, rice vinegar, honey (or maple syrup), and sesame oil to create the dressing.
  5. In a large bowl, combine sliced chicken with chopped veggies. Pour the dressing over and toss gently until well coated.
  6. Garnish with toasted sesame seeds before serving.
