- 3 boneless skinless chicken breasts (about 1 lb)
- 4 cups chopped green cabbage
- 1 cup grated carrots
- 1 cup sliced bell peppers (mixed colors)
- ½ cup sliced green onions
- 2 tbsp sesame oil
- ¼ cup low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 2 tbsp toasted sesame seeds
Instructions
- Marinate chicken breasts in soy sauce and sesame oil for 15 minutes.
- Cook marinated chicken in a skillet over medium-high heat for about 6-7 minutes per side until fully cooked. Allow to cool and slice.
- While the chicken cools, chop the cabbage, grate the carrots, and slice the bell peppers and green onions.
- In a bowl, whisk together soy sauce, rice vinegar, honey (or maple syrup), and sesame oil to create the dressing.
- In a large bowl, combine sliced chicken with chopped veggies. Pour the dressing over and toss gently until well coated.
