Description

Salsa Verde Chicken & Rice Skillet is a delightful one-pan meal that combines juicy chicken, zesty salsa verde, and fluffy rice into a comforting dish perfect for busy weeknights. With bright flavors and minimal cleanup, this recipe will have your family asking for seconds.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup salsa verde
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the chicken breasts and pat dry.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until golden brown on one side (about 5 minutes).
  3. Flip the chicken and pour in the salsa verde. Cook for another 5 minutes while stirring.
  4. Stir in rice and chicken broth. Bring to a gentle boil, then reduce heat to low, cover, and simmer for about 20 minutes until rice is tender.
  5. Remove from heat, stir in lime juice and cilantro, then let sit covered for an additional 5 minutes.
  6. Fluff rice with a fork before serving; garnish with extra cilantro if desired.
