  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil over medium heat, then reduce to low and cover for 15 minutes until fluffy.
  2. While quinoa cooks, chop red onion and prepare black beans and corn.
  3. In a large bowl, mix cooked quinoa with black beans, corn, onion, and cilantro.
  4. Drizzle lime juice and olive oil over the mixture. Season with salt and pepper; toss gently to combine.
  5. Taste test for seasoning adjustments. Refrigerate for at least 30 minutes before serving.
