  • 2 tsp chili powder
  • 1 tsp paprika
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion and bell peppers until softened.
  2. Add the ground turkey, breaking it apart with a spoon until browned.
  3. Stir in the minced garlic and spices (cumin, chili powder, paprika, salt, and pepper), mixing well.
  4. Pour in the canned tomatoes (with juices), chicken broth, and lime juice; stir to combine.
  5. Bring to a boil, then add the rice. Reduce heat to low, cover tightly, and simmer for about 20 minutes or until rice absorbs liquid.
  6. Let sit off heat for five minutes before fluffing with a fork; garnish with cilantro if desired.
