- 1 cup fresh basil leaves, roughly torn
- 2 ripe heirloom tomatoes, diced
- 1 cup fresh mozzarella cheese, diced (drained)
- 3 cloves garlic, minced
- 1 medium onion, finely chopped
- 2 tbsp extra virgin olive oil
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Prepare your ingredients by chopping the onion and mincing the garlic; tear the basil into pieces.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add minced garlic and cook until fragrant (about 1 minute).
- Add ground chicken to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked through (approximately 7-10 minutes).
- Stir in diced tomatoes, Italian seasoning, salt, and pepper. Simmer for about 5 minutes.
- Fold in torn basil leaves and diced mozzarella just before removing from heat to allow cheese to melt slightly.
