  • 1 cup fresh basil leaves, roughly torn
  • 2 ripe heirloom tomatoes, diced
  • 1 cup fresh mozzarella cheese, diced (drained)
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 tbsp extra virgin olive oil
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic; tear the basil into pieces.
  2. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add minced garlic and cook until fragrant (about 1 minute).
  3. Add ground chicken to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked through (approximately 7-10 minutes).
  4. Stir in diced tomatoes, Italian seasoning, salt, and pepper. Simmer for about 5 minutes.
  5. Fold in torn basil leaves and diced mozzarella just before removing from heat to allow cheese to melt slightly.
  6. Serve warm on plates or as sliders on toasted buns.
