  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (10 oz) diced tomatoes with green chiles
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 2 cups tortilla chips, crushed
  • Fresh cilantro, for garnish
  • Sour cream or Greek yogurt, for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté diced chicken in olive oil until golden brown and cooked through (about 8-10 minutes).
  3. Stir in taco seasoning, black beans, corn, and diced tomatoes; simmer for 5 minutes to combine flavors.
  4. In a greased baking dish, layer half of the chicken mixture at the bottom. Top with half of the cheese and half of the crushed tortilla chips. Repeat layers with remaining ingredients.
  5. Bake for 25-30 minutes until bubbly and golden brown. Let cool slightly before serving. Garnish with cilantro and serve with sour cream or Greek yogurt.
