- 1 cup corn kernels (fresh or frozen)
- 1 can (10 oz) diced tomatoes with green chiles
- 2 cups shredded cheese (cheddar and Monterey Jack blend)
- 2 cups tortilla chips, crushed
- Fresh cilantro, for garnish
- Sour cream or Greek yogurt, for serving
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, sauté diced chicken in olive oil until golden brown and cooked through (about 8-10 minutes).
- Stir in taco seasoning, black beans, corn, and diced tomatoes; simmer for 5 minutes to combine flavors.
- In a greased baking dish, layer half of the chicken mixture at the bottom. Top with half of the cheese and half of the crushed tortilla chips. Repeat layers with remaining ingredients.
