  • 1 cup whole wheat breadcrumbs

  • 1 tsp chili powder
  • 1 large egg (or 1 tbsp flaxseed meal + 3 tbsp water for vegan option)
  • 2 tbsp olive oil (plus more for cooking)
  • 4 whole grain or gluten-free burger buns
  • Fresh toppings (lettuce, tomatoes, avocado)

Instructions

  1. In a large bowl, mash the drained black beans with a fork until mostly smooth but still slightly chunky.
  2. Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic; sauté until golden brown and fragrant.
  3. Combine sautéed onion and garlic with mashed beans in the bowl. Stir in breadcrumbs, cumin, chili powder, and egg (or flaxseed mixture). Mix well.
  4. Form the mixture into patties about ½ inch thick.
  5. In the same skillet, heat additional olive oil over medium-high heat. Cook patties for about 5 minutes on each side until crispy and heated through.
