Description

Southwest Egg Rolls are crispy, flavor-packed snacks filled with spicy chicken, beans, and cheese. Perfect for game day or gatherings, these rolls will steal the show!


Ingredients

  • 2 cups boneless skinless chicken breasts (shredded)
  • 1 can black beans (rinsed)
  • 1 cup shredded cheese (Monterey Jack and cheddar)
  • 1 cup bell peppers (chopped)
  • ½ cup green onions (sliced)
  • 2 tablespoons taco seasoning
  • 12 egg roll wrappers
  • Cooking oil (for frying)

Instructions

  1. In a large bowl, combine shredded chicken, black beans, cheese, bell peppers, green onions, and taco seasoning until well mixed.
  2. Lay an egg roll wrapper diagonally on your work surface. Place approximately two tablespoons of filling in the center.
  3. Fold two corners over the filling and roll tightly away from you while tucking in the sides. Seal edges with water.
  4. For frying: Heat oil in a skillet over medium heat and cook until golden brown, about 3–4 minutes per side. For baking: Preheat oven to 400°F (200°C) and bake until crispy, about 15 minutes.
  5. Serve warm with salsa or guacamole.
