- 8 oz cream cheese
- 2 cups low-sodium chicken broth
- 8 oz pasta (penne or fettuccine)
- 1 cup freshly grated Parmesan cheese
- Fresh spinach (optional)
Instructions
- Prepare your ingredients by chopping the chicken into bite-sized pieces and mincing the garlic.
- In the slow cooker, combine chicken, garlic, Italian seasoning, and enough chicken broth to cover.
- Cut cream cheese into cubes and add to the mixture; stir gently to combine.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before serving, boil pasta according to package instructions until al dente. Drain and reserve some starchy water.
- Stir cooked pasta and Parmesan cheese into the slow cooker. If using, add fresh spinach until wilted.
