- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers (red or green)
- 1 cup cooked sausage or bacon
- 4 large flour tortillas
- Salt and pepper to taste
Instructions
- Prep your ingredients by chopping bell peppers and cooking the sausage if using raw.
- In a skillet over medium heat, whisk eggs with salt and pepper until fluffy (about 3-4 minutes).
- Stir in the cooked sausage (or bacon) and diced bell peppers until heated through.
- Lay each tortilla flat, spoon about 1/4 cup of the egg mixture into the center, and sprinkle with cheese.
- Fold the sides of the tortilla over the filling, then roll tightly from the bottom up. Wrap in foil or parchment if needed.
- Place burritos in a single layer in the freezer for 1-2 hours until solid, then transfer to a ziplock bag.
