Ingredients

  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers (red or green)
  • 1 cup cooked sausage or bacon
  • 4 large flour tortillas
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping bell peppers and cooking the sausage if using raw.
  2. In a skillet over medium heat, whisk eggs with salt and pepper until fluffy (about 3-4 minutes).
  3. Stir in the cooked sausage (or bacon) and diced bell peppers until heated through.
  4. Lay each tortilla flat, spoon about 1/4 cup of the egg mixture into the center, and sprinkle with cheese.
  5. Fold the sides of the tortilla over the filling, then roll tightly from the bottom up. Wrap in foil or parchment if needed.
  6. Place burritos in a single layer in the freezer for 1-2 hours until solid, then transfer to a ziplock bag.
