- 1 can (14.5 oz) diced tomatoes
- 2 bell peppers (red and green), chopped
- 1 medium yellow onion, chopped
- 4 cloves garlic, minced

- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley (optional)
Instructions
- Prep your ingredients: chop the onions and bell peppers; mince the garlic.
- In a skillet, heat olive oil over medium heat. Sear chicken thighs until golden brown, about 5 minutes per side.
- Transfer seared chicken to the crock pot. Add diced tomatoes with juices, bell peppers, onions, garlic, Italian seasoning, salt, and pepper.
- Mix gently to coat the chicken in the sauce.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Once cooked through (chicken reaches an internal temperature of 165°F), shred the chicken in the sauce using two forks. Garnish with fresh parsley if desired.
