  • 1 can (14.5 oz) diced tomatoes

  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley (optional)

Instructions

  1. Prep your ingredients: chop the onions and bell peppers; mince the garlic.
  2. In a skillet, heat olive oil over medium heat. Sear chicken thighs until golden brown, about 5 minutes per side.
  3. Transfer seared chicken to the crock pot. Add diced tomatoes with juices, bell peppers, onions, garlic, Italian seasoning, salt, and pepper.
  4. Mix gently to coat the chicken in the sauce.
  5. Cover and cook on low for 6-8 hours or high for 4 hours.
  6. Once cooked through (chicken reaches an internal temperature of 165°F), shred the chicken in the sauce using two forks. Garnish with fresh parsley if desired.
