Ingredients

  • 1 lb lean ground beef
  • 1 yellow onion, chopped
  • 1 can whole kernel corn, drained
  • 1 cup sweet bell peppers, diced
  • 1 can black beans, rinsed and drained
  • chili powder and cumin
  • 1 cup cornmeal mix
  • 1 cup shredded cheddar cheese
  • sour cream for serving

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, brown the ground beef with onions until translucent. Add bell peppers and cook until slightly softened.
  3. Stir in corn, black beans, chili powder, and cumin; simmer for 5 minutes.
  4. In a separate bowl, prepare the cornmeal mix as directed on the package. Pour half into the baking dish.
  5. Layer the meat mixture on top of the batter followed by remaining cornbread mix and sprinkle cheese on top.
  6. Bake for 30-35 minutes until golden brown. Let cool before slicing and serve with optional sour cream.
