- 1 lb lean ground beef
- 1 yellow onion, chopped
- 1 can whole kernel corn, drained
- 1 cup sweet bell peppers, diced
- 1 can black beans, rinsed and drained
- chili powder and cumin
- 1 cup cornmeal mix
- 1 cup shredded cheddar cheese
- sour cream for serving
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- In a skillet over medium heat, brown the ground beef with onions until translucent. Add bell peppers and cook until slightly softened.
- Stir in corn, black beans, chili powder, and cumin; simmer for 5 minutes.
- In a separate bowl, prepare the cornmeal mix as directed on the package. Pour half into the baking dish.
- Layer the meat mixture on top of the batter followed by remaining cornbread mix and sprinkle cheese on top.
- Bake for 30-35 minutes until golden brown. Let cool before slicing and serve with optional sour cream.
