Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • 2 tbsp butter

Instructions

  1. Preheat skillet over medium-high heat.
  2. Pound chicken breasts to about ½ inch thick and dredge in flour.
  3. Heat olive oil and butter in the skillet; sear chicken for 4-5 minutes per side until golden brown.
  4. Remove chicken; sauté minced garlic in the same skillet until fragrant.
  5. Pour in lemon juice and broth, then stir in heavy cream and simmer until slightly thickened.
  6. Return chicken to the skillet, spooning sauce over each piece. Serve hot.
