- 3–4 lbs corned beef brisket
- 1 medium head of green cabbage (about 2 lbs), cut into wedges
- 3 large carrots, cut into chunks
- 4 medium Yukon gold or red potatoes, quartered
- 2 large onions, quartered
- 2 tbsp pickling spice
- 4 cups low-sodium beef broth or water
Instructions
- Rinse the corned beef under cold water to remove excess salt. Cut vegetables into large chunks.
- In a large pot over medium heat, sear the brisket on both sides until browned.
- Add onions and cook until translucent.
- Pour in enough broth or water to cover the brisket completely. Add pickling spices and bring to a gentle boil; then reduce heat to low.
- After 2 hours, add carrots, potatoes, and cabbage. Cook for another 30-40 minutes until vegetables are tender but not mushy.
- Slice against the grain before serving.
