  • 1 medium head of green cabbage (about 2 lbs), cut into wedges
  • 3 large carrots, cut into chunks
  • 4 medium Yukon gold or red potatoes, quartered
  • 2 large onions, quartered
  • 2 tbsp pickling spice
  • 4 cups low-sodium beef broth or water

Instructions

  1. Rinse the corned beef under cold water to remove excess salt. Cut vegetables into large chunks.
  2. In a large pot over medium heat, sear the brisket on both sides until browned.
  3. Add onions and cook until translucent.
  4. Pour in enough broth or water to cover the brisket completely. Add pickling spices and bring to a gentle boil; then reduce heat to low.
  5. After 2 hours, add carrots, potatoes, and cabbage. Cook for another 30-40 minutes until vegetables are tender but not mushy.
  6. Slice against the grain before serving.
