Ingredients

Scale
  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 4 cups all-purpose flour
  • 2 ¼ tsp active dry yeast (1 packet)
  • ½ cup unsalted butter, melted (plus extra for brushing)
  • 1 cup warm milk (110°F/43°C)
  • ¼ cup granulated sugar
  • 1 ½ tsp salt
  • 2 large eggs

Instructions

  1. Preheat oven to 400°F (200°C). Bake sweet potatoes until tender, about 45 minutes. Let cool slightly, then mash until smooth.
  2. In a bowl, combine warm milk with yeast and sugar. Let sit for 5–10 minutes until bubbly.
  3. Mix melted butter and eggs into the yeast mixture. Gradually add flour and salt; mix until combined.
  4. Knead on a floured surface for 8–10 minutes until smooth and elastic.
  5. Place in a greased bowl covered with a towel to rise for about an hour or until doubled in size.
  6. Punch down the dough, divide into 12 portions, shape into balls, and place on a greased baking sheet. Let rise again for about 30 minutes.
  7. Preheat oven to 375°F (190°C). Brush rolls with melted butter and bake for 20–25 minutes until golden brown.
