- 1 cup warm milk (110°F/43°C)
- ¼ cup granulated sugar
- 1 ½ tsp salt
- 2 large eggs
Instructions
- Preheat oven to 400°F (200°C). Bake sweet potatoes until tender, about 45 minutes. Let cool slightly, then mash until smooth.
- In a bowl, combine warm milk with yeast and sugar. Let sit for 5–10 minutes until bubbly.
- Mix melted butter and eggs into the yeast mixture. Gradually add flour and salt; mix until combined.
- Knead on a floured surface for 8–10 minutes until smooth and elastic.
- Place in a greased bowl covered with a towel to rise for about an hour or until doubled in size.
- Punch down the dough, divide into 12 portions, shape into balls, and place on a greased baking sheet. Let rise again for about 30 minutes.
- Preheat oven to 375°F (190°C). Brush rolls with melted butter and bake for 20–25 minutes until golden brown.
