Description

Reese’s Cup Easter Bunny Cupcakes are a delightful springtime treat with moist chocolate cake, creamy peanut butter frosting, and topped with mini Reese’s cups. Perfect for festive gatherings!


Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk (or almond milk)
  • 1/3 cup vegetable oil (or melted butter)
  • 1/2 cup creamy peanut butter
  • 2 cups confectioners’ sugar
  • 12 mini Reese’s cups

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, combine eggs, milk, and oil; mix into dry ingredients until just combined.
  4. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  5. Allow cupcakes to cool completely before frosting.
  6. Beat peanut butter with confectioners’ sugar until fluffy; add milk as needed for consistency.
  7. Frost each cupcake generously and top with a mini Reese's cup.
