  • 1 cup tri-color quinoa
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper (red, yellow, or green), diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • Juice of 1 lemon (about 2 tbsp)
  • 1/4 cup extra virgin olive oil
  • Fresh parsley or mint for garnish

Instructions

  1. Rinse the quinoa under cold water until clear. Combine it with 2 cups of water in a saucepan. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes until fluffy.
  2. While the quinoa cooks, chop the cucumber, cherry tomatoes, bell pepper, and red onion into bite-sized pieces.
  3. Once the veggies are ready, combine them in a large bowl with pitted Kalamata olives and crumbled feta cheese.
  4. In a small bowl, whisk together olive oil and lemon juice. Drizzle over the veggie mixture and toss gently to combine.
  5. Let sit for about 10 minutes to allow flavors to meld.
  6. Serve in bowls or plates, garnished with freshly chopped herbs.
