  • 1 cup fresh spinach, chopped
  • 1 cup carrots, diced finely
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup acini di pepe pasta
  • ½ cup freshly grated Parmesan cheese
  • 1 egg
  • ½ cup breadcrumbs
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare the Meatballs: In a large bowl, mix ground meat with breadcrumbs, egg, minced garlic, parsley, salt, and pepper. Form into small meatballs.
  2. Sauté Vegetables: Heat olive oil in a large pot over medium heat. Sauté onions and carrots until onions are translucent (about 5 minutes).
  3. Add Broth and Greens: Pour in chicken broth and bring to a simmer. Add chopped spinach and cook until wilted (around 3 minutes).
  4. Cook the Pasta: Stir in acini di pepe pasta and cook according to package instructions (7-9 minutes), stirring occasionally.
  5. Add Meatballs & Seasoning: Gently add meatballs to the soup and simmer until cooked through (about 10 minutes). Adjust seasoning with salt and pepper.
  6. Serve & Enjoy: Ladle soup into bowls and sprinkle with freshly grated Parmesan before serving.
