Instructions
- Preheat the oven to 400°F (200°C). Slice the baguette into 1-inch thick pieces.
- Arrange baguette slices on a baking sheet and toast for 5-7 minutes until golden brown and crispy.
- In a bowl, gently mix cranberries, pomegranate seeds, goat cheese, chopped mint, honey, salt, and pepper.
- Spoon the mixture generously onto each toasted baguette slice.
- Drizzle with leftover honey and garnish with additional mint before serving.
