Description

Cranberry and Pomegranate Bruschetta is a colorful, flavor-packed appetizer that combines tart cranberries, sweet pomegranates, and creamy goat cheese for a delightful taste experience.

  • 1 cup fresh cranberries
  • 1/2 cup pomegranate seeds
  • 4 oz goat cheese (crumbled)
  • 2 tbsp honey
  • 1/4 cup fresh mint leaves (chopped)
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the baguette into 1-inch thick pieces.
  2. Arrange baguette slices on a baking sheet and toast for 5-7 minutes until golden brown and crispy.
  3. In a bowl, gently mix cranberries, pomegranate seeds, goat cheese, chopped mint, honey, salt, and pepper.
  4. Spoon the mixture generously onto each toasted baguette slice.
  5. Drizzle with leftover honey and garnish with additional mint before serving.
