  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 ripe avocado, diced
  • 4 oz crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the chickpeas by draining and rinsing them under cold water.
  2. Chop the cucumber, halve the cherry tomatoes, and finely chop the red onion and parsley.
  3. In a medium bowl, mash the avocado until creamy but still chunky.
  4. Add the chickpeas, cucumber, tomatoes, onion, parsley, lemon juice, olive oil, salt, and pepper to the bowl. Mix gently until combined.
  5. Taste and adjust seasoning if needed; serve in a beautiful bowl garnished with extra parsley or feta.
