- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 4 large flour tortillas
- 8 oz cream cheese (softened)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup enchilada sauce (store-bought or homemade)
- 2 green onions (chopped)
- 1 tsp cumin
- 1 tsp chili powder
Instructions
- Cook chicken breasts in a skillet over medium heat for 15-20 minutes until fully cooked. Shred the chicken once slightly cooled.
- In a mixing bowl, combine shredded chicken, cream cheese, half of each type of shredded cheese, green onions, cumin, and chili powder. Mix until well combined.
- On each tortilla, spread an even layer of the chicken mixture, then roll tightly from one end to another.
- Pour enchilada sauce into a baking dish to cover the bottom lightly. Place rolled tortillas seam-side down in the dish and top with remaining sauce and cheese.
- Preheat oven to 350°F (175°C). Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until bubbly.
