Instructions

  1. Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk eggs and sugar until thick and pale, about 5 minutes. Gently fold in sifted flour, cocoa powder, and baking powder.
  3. Pour batter into the prepared pan and bake for 12-15 minutes until springy to touch.
  4. Once slightly cooled, invert onto powdered sugar-dusted parchment paper and roll up carefully while still warm. Let cool completely.
  5. For the filling, beat mascarpone with whipped heavy cream, sugar, coffee liqueur (if using), and vanilla extract until thickened.
