- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/3 cup cocoa powder

- 8 oz mascarpone cheese
- 1/2 cup strong brewed coffee (cooled)
- 1 tsp vanilla extract
- 1 cup heavy cream
- 2 tbsp coffee liqueur (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a bowl, whisk eggs and sugar until thick and pale, about 5 minutes. Gently fold in sifted flour, cocoa powder, and baking powder.
- Pour batter into the prepared pan and bake for 12-15 minutes until springy to touch.
- Once slightly cooled, invert onto powdered sugar-dusted parchment paper and roll up carefully while still warm. Let cool completely.
- For the filling, beat mascarpone with whipped heavy cream, sugar, coffee liqueur (if using), and vanilla extract until thickened.
- Unroll the sponge cake, spread an even layer of filling, re-roll tightly, wrap in plastic wrap, and chill before slicing.
