- 1 medium yellow onion, finely chopped
- 2 garlic cloves, minced
- 1/2 cup breadcrumbs (plain or seasoned)
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 2 tbsp olive oil, plus more for cooking
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Peel and chop sweet potatoes into chunks, then roast for about 25 minutes until fork-tender.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and cook for an additional minute.
- In a large bowl, mash the roasted sweet potatoes. Mix in black beans, sautéed onions, breadcrumbs, cumin, smoked paprika, salt, and pepper until well combined.
- Shape mixture into patties about ¾ inch thick.
- Heat olive oil in the skillet over medium heat and cook each patty for 4-5 minutes per side until golden brown.
- Serve on toasted buns with desired toppings.
