  • 1 cup roasted sweet potatoes (about 2 medium sweet potatoes)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil, plus more for cooking
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Peel and chop sweet potatoes into chunks, then roast for about 25 minutes until fork-tender.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and cook for an additional minute.
  4. In a large bowl, mash the roasted sweet potatoes. Mix in black beans, sautéed onions, breadcrumbs, cumin, smoked paprika, salt, and pepper until well combined.
  5. Shape mixture into patties about ¾ inch thick.
  6. Heat olive oil in the skillet over medium heat and cook each patty for 4-5 minutes per side until golden brown.
  7. Serve on toasted buns with desired toppings.
