- 1 lb flank or sirloin steak
- 1 cup long-grain white rice
- 1 cup queso blanco (or melting cheese)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup bell peppers, diced (mixed colors)
- ½ cup fresh cilantro, chopped
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Rinse the rice under cold water until clear. Combine with 2 cups of water in a saucepan, bring to boil, cover, and simmer on low for 18 minutes.
- While rice cooks, heat a skillet over high heat. Season the steak with salt and pepper; sear for 4-5 minutes on each side until browned. Remove and let rest.
- In the same skillet, sauté onions and bell peppers over medium heat until translucent (about 5-7 minutes).
- Add garlic, cumin, and paprika; cook for an additional minute.
- Slice the rested steak thinly against the grain. Combine cooked rice with veggies, add sliced steak and queso blanco. Stir over medium heat for 2-3 minutes until well mixed.
- Serve garnished with cilantro.
