Description

Indulge in this creamy and savory Smothered Chicken and Rice, a comforting one-pot meal that’s perfect for family dinners or last-minute gatherings.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 medium onion
  • 3 cloves garlic
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil or butter for sautéing

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In a large skillet over medium heat, add olive oil or butter. Sauté the onions until translucent (about 5 minutes), then add minced garlic until fragrant.
  3. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook each side for about 6-7 minutes until golden brown.
  4. Pour in the chicken broth and heavy cream, followed by smoked paprika, salt, and pepper. Stir gently while scraping any browned bits from the bottom.
  5. Add uncooked rice directly into the sauce mixture. Bring to a boil, then reduce heat to low, cover tightly, and simmer for 18-20 minutes until rice absorbs all liquid.
  6. Fluff the rice with a fork before serving. Taste and adjust seasoning if necessary.
