Ingredients

  • 1 cup long-grain basmati or jasmine rice
  • 2 cups low-sodium vegetable broth
  • 1 cup fresh button or cremini mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter or olive oil
  • 2 tablespoons fresh parsley or thyme, chopped
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat butter or olive oil over medium heat. Add chopped onion and cook until translucent.
  2. Stir in minced garlic and sliced mushrooms; sauté until mushrooms are golden brown, about 5–7 minutes.
  3. Add rinsed rice to the skillet, stirring for 2–3 minutes until slightly opaque.
  4. Pour in vegetable broth; season with salt and pepper. Bring to a boil, then reduce heat and cover. Simmer for 15–20 minutes until liquid is absorbed.
  5. Remove from heat and fluff rice with a fork. Mix in freshly chopped herbs before serving.
