Description

Savor the comforting flavors of Monterey Chicken Orzo, a delicious one-pot meal featuring tender chicken, zesty herbs, and fluffy orzo. Perfect for family gatherings or weeknight dinners!

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup orzo pasta
  • 3 cloves garlic, minced
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 tsp dried Italian herbs
  • Salt & pepper to taste

Instructions

  1. Gather and chop all ingredients: bell peppers into bite-sized pieces and mince garlic.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until golden brown on all sides (about 6-8 minutes).
  3. Add minced garlic and chopped bell peppers to the skillet; sauté for 2-3 minutes until fragrant.
  4. Pour in diced tomatoes with their juices and add chicken broth. Bring to a gentle simmer.
  5. Stir in orzo pasta, dried herbs, salt, and pepper. Cook uncovered for 10-12 minutes until orzo absorbs liquid.
  6. Check for al dente texture before removing from heat. Let it sit for a few minutes before serving.
