  • 1 cup diced cucumbers
  • 1 cup halved cherry tomatoes

  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water until clear. In a pot, combine lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer uncovered for 20-25 minutes until tender.
  2. While lentils cook, chop cucumbers, cherry tomatoes, and red onions into bite-sized pieces.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  4. Once lentils are cooked and slightly cooled, transfer them to a large bowl. Add chopped veggies and parsley.
  5. Drizzle dressing over the salad and toss gently until well combined. Let sit for 10 minutes before serving.
