- Salt and pepper to taste
- 1 cup small pasta or rice, cooked separately
Instructions
- In a large pot, heat 1 tbsp olive oil over medium heat. Sauté diced onion for about 5 minutes until translucent.
- Add minced garlic, carrots, and celery; cook for another 3-4 minutes until slightly softened.
- Pour in vegetable broth and add the turkey. Season with thyme, salt, and pepper. Bring to a gentle simmer.
- If using pasta or rice, stir it in now and cook according to package instructions until al dente.
- Let the soup simmer for 20-30 minutes on low heat. Stir in chopped parsley before serving.
