Ingredients

  • 1 cup basmati rice
  • 3 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cinnamon stick
  • 4 cardamom pods, crushed
  • 2 cups vegetable broth
  • Salt and pepper, to taste
  • ¼ cup toasted pine nuts or almonds (for garnish)
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Rinse basmati rice under cold water until clear to remove excess starch.
  2. Heat olive oil in a medium saucepan over medium heat. Sauté chopped onion until translucent.
  3. Stir in minced garlic, cinnamon stick, and crushed cardamom pods; sauté for about 30 seconds until fragrant.
  4. Add rinsed rice, stirring to coat with oil and spices. Toast lightly for 2-3 minutes.
  5. Pour in vegetable broth and season with salt and pepper. Bring to a boil, then reduce heat to low.
  6. Cover and simmer for 15-20 minutes until all liquid is absorbed.
  7. Fluff rice with a fork before serving and garnish with toasted nuts and fresh herbs.
