- 3 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 cinnamon stick
- 4 cardamom pods, crushed
- 2 cups vegetable broth
- Salt and pepper, to taste
- ¼ cup toasted pine nuts or almonds (for garnish)
- Fresh parsley or cilantro, chopped (for garnish)
Instructions
- Rinse basmati rice under cold water until clear to remove excess starch.
- Heat olive oil in a medium saucepan over medium heat. Sauté chopped onion until translucent.
- Stir in minced garlic, cinnamon stick, and crushed cardamom pods; sauté for about 30 seconds until fragrant.
- Add rinsed rice, stirring to coat with oil and spices. Toast lightly for 2-3 minutes.
- Pour in vegetable broth and season with salt and pepper. Bring to a boil, then reduce heat to low.
- Cover and simmer for 15-20 minutes until all liquid is absorbed.
- Fluff rice with a fork before serving and garnish with toasted nuts and fresh herbs.
