  • 1 medium head green cabbage (about 2 lbs)
  • 1 cup low-sodium vegetable broth
  • 1 medium yellow onion, chopped
  • 34 cloves garlic, minced
  • 1 tsp salt (to taste)
  • 1/2 tsp black pepper (to taste)
  • 2 tbsp olive oil
  • Optional seasoning: 1 tsp smoked paprika or 1 tsp caraway seeds

Instructions

  1. Wash the cabbage under cold water and remove any damaged leaves. Slice into wedges that fit your Instant Pot.
  2. Set your Instant Pot to sauté mode; add olive oil. Once hot, add chopped onions and minced garlic, cooking until golden brown.
  3. Gently place cabbage wedges into the pot along with vegetable broth. Ensure they’re snug, but not packed tightly.
  4. Season with salt and pepper; add optional spices if desired.
  5. Close the lid and set to high pressure for 5 minutes. Allow for a natural release for an additional 5 minutes before manually releasing any remaining pressure.
