Instructions
- Wash and chop all vegetables; dice the onion and mince the garlic.
- In a large pot, heat 2 tsp of olive oil over medium heat. Sauté onions and garlic until translucent.
- Add carrots and celery; sauté for about 5 minutes until they soften.
- Stir in cabbage, diced tomatoes, and vegetable broth. Bring to a gentle boil.
- Add bay leaves, thyme, and pepper. Reduce heat to low and simmer for 30 minutes.
- Squeeze in fresh lemon juice before serving.
