  • 1 cup quinoa
  • 1 large sweet potato (about 200g), diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 ripe avocado, diced
  • 2 cups baby spinach
  • 1/4 cup crumbled feta cheese
  • 2 tbsp olive oil
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, bring quinoa and 2 cups of water to a boil. Reduce heat, cover, and simmer for about 15 minutes until fluffy.
  2. Preheat oven to 425°F (220°C). Toss diced sweet potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden brown.
  3. Spread chickpeas on another baking sheet, drizzle with olive oil, season with spices (like paprika or cumin), and roast alongside sweet potatoes for about 20 minutes until crispy.
  4. In a large bowl, combine cooked quinoa, roasted sweet potatoes, chickpeas, baby spinach, diced avocado, and crumbled feta cheese. Gently stir.
  5. Squeeze half a lemon over the mixture before serving.
