  • 2 medium zucchinis, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, add olive oil and sauté onions until translucent (about 5 minutes).
  3. Add minced garlic and cook for an additional 30 seconds.
  4. Stir in ground beef and cook until browned (6-8 minutes), breaking it apart as it cooks.
  5. Mix in diced zucchini and Italian seasoning; cook for another 3-4 minutes until zucchini softens.
  6. Pour in marinara sauce; season with salt and pepper. Simmer for 5 minutes.
  7. Transfer mixture to the baking dish; top with shredded cheese.
  8. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes until bubbly.
  9. Let cool slightly before serving.
