  • 3 cloves fresh garlic, minced
  • 1 cup long-grain rice
  • 6 cups low-sodium chicken broth
  • Juice of 2 fresh lemons
  • 1/4 cup fresh dill or parsley, chopped
  • Salt & pepper to taste
  • 2 eggs (optional)
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients: mince garlic and dice chicken into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil and sauté the chicken until golden brown. Add minced garlic and sauté for another 30 seconds until fragrant.

  4. Stir in freshly squeezed lemon juice, dill or parsley, salt, and pepper to taste.
