- 4 tbsp eel sauce (store-bought or homemade)

Instructions
- Prepare the sushi rice by rinsing it under cold water until the water runs clear. Cook according to package instructions and let cool slightly.
- Slice the avocado and cucumber into thin strips.
- Set up your rolling station with a bamboo mat covered in plastic wrap. Place a nori sheet shiny side down on the mat.
- Wet your hands to prevent sticking; spread about 1 cup of rice evenly over the nori, leaving an inch at the top.
- Layer eel, cucumber, and avocado horizontally across the rice.
- Roll from the bottom using the mat for support; seal with water on the edge of the nori.
- Cut the roll into 8 pieces with a sharp knife dipped in water; garnish with sesame seeds and drizzle eel sauce over top.
