  • 3 sheets nori (seaweed)
  • 4 oz fresh eel (unagi), grilled
  • 1 ripe avocado, sliced
  • 1/2 English cucumber, cut into strips
  • 4 tbsp eel sauce (store-bought or homemade)
  • 2 tbsp toasted sesame seeds
  • Pickled ginger (for serving)

Instructions

  1. Prepare the sushi rice by rinsing it under cold water until the water runs clear. Cook according to package instructions and let cool slightly.
  2. Slice the avocado and cucumber into thin strips.
  3. Set up your rolling station with a bamboo mat covered in plastic wrap. Place a nori sheet shiny side down on the mat.
  4. Wet your hands to prevent sticking; spread about 1 cup of rice evenly over the nori, leaving an inch at the top.
  5. Layer eel, cucumber, and avocado horizontally across the rice.
  6. Roll from the bottom using the mat for support; seal with water on the edge of the nori.
  7. Cut the roll into 8 pieces with a sharp knife dipped in water; garnish with sesame seeds and drizzle eel sauce over top.
