  • 3 boneless skinless chicken breasts (about 1 pound)
  • 1 packet ranch seasoning mix (1 oz)
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • ½ cup bacon bits
  • 2 green onions, chopped
  • ½ cup sour cream

Instructions

  1. Preheat oven to 400°F (200°C). Scrub the potatoes clean and dry with a towel. Prick each potato multiple times with a fork.
  2. Bake the potatoes directly on the oven rack or on a foil-lined baking sheet for 45-60 minutes until tender.
  3. While baking, cook chicken breasts in a medium saucepan over medium heat until golden brown and cooked through (165°F internal temperature). Shred the chicken using two forks.
  4. Mix the shredded chicken with softened cream cheese and ranch seasoning until creamy.
  5. Once baked, carefully slice each potato open lengthwise and scoop out some flesh to mix with the chicken mixture.
  6. Stuff each potato with the filling, top with cheddar cheese, and bake for an additional 10 minutes to melt the cheese.
