Ingredients

  • 4 cups mixed greens (romaine, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • ½ red onion, thinly sliced
  • 1 avocado, diced
  • 1 cup corn (fresh or frozen)
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 tbsp honey
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse mixed greens under cold water and dry thoroughly.
  2. Dice cherry tomatoes and slice cucumber and red onion.
  3. In a large bowl, combine greens, tomatoes, cucumber, red onion, avocado, corn, feta cheese, and cilantro.
  4. Drizzle lime juice and olive oil over the salad.
  5. In a small bowl, whisk together honey, garlic powder, salt, and pepper; pour over the salad.
  6. Toss gently to combine all ingredients evenly.
