- 3 cups grated carrots (about 5 medium carrots)
- 8 oz cream cheese (room temperature)
- ½ cup unsalted butter (room temperature)
- 4 cups powdered sugar (sifted)
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
- In another bowl, mix eggs and oil until smooth; combine with dry ingredients and fold in grated carrots.
- Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Cool cakes on wire racks. Meanwhile, beat cream cheese and butter until smooth; gradually add powdered sugar and vanilla until fluffy.
- Once cool, layer cakes with frosting in between and coat the top and sides.
