- 3–4 boneless skinless chicken breasts (about 1 lb)
- 6 slices thick-cut bacon
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/2 medium red onion, thinly sliced
- 1/2 cup ranch dressing or balsamic vinaigrette
Instructions
- Preheat grill or skillet to medium heat. Season chicken with salt and pepper; cook until internal temperature reaches 165°F (75°C), about 6-7 minutes per side.
- In a separate pan, cook bacon until crispy (5-7 minutes). Drain on paper towels.
- Chop lettuce, halve cherry tomatoes, dice cucumber, and slice red onion.
- In a large bowl, combine the lettuce, tomatoes, cucumber, and onion. Crumble in the cooked bacon and diced chicken.
- Drizzle with dressing and toss gently to combine.
- Serve immediately or refrigerate for later.
