  • 4 fresh salmon fillets (6 oz each)
  • 1 cup ricotta cheese
  • 12 asparagus spears
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 cup fresh basil, chopped
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the asparagus under cold water and set aside.
  3. In a bowl, mix ricotta cheese, chopped basil, garlic powder, salt, pepper, and lemon zest until smooth.
  4. Lay the salmon fillets flat; place filling along one edge and add 2-3 asparagus spears. Roll tightly.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear rolls seam-side down until golden brown (about 3 minutes per side).
  6. Transfer the skillet to the oven and bake for 15-20 minutes until the salmon flakes easily with a fork.
  7. While baking, whisk together lemon juice and olive oil for the sauce.
  8. Serve warm drizzled with lemon sauce.
