- 4 fresh salmon fillets (6 oz each)
- 1 cup ricotta cheese
- 12 asparagus spears
- 2 tbsp freshly squeezed lemon juice
- 1/4 cup fresh basil, chopped
- 1 tsp garlic powder
- Salt and pepper, to taste
- 2 tbsp olive oil
- Zest of 1 lemon
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the asparagus under cold water and set aside.
- In a bowl, mix ricotta cheese, chopped basil, garlic powder, salt, pepper, and lemon zest until smooth.
- Lay the salmon fillets flat; place filling along one edge and add 2-3 asparagus spears. Roll tightly.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear rolls seam-side down until golden brown (about 3 minutes per side).
- Transfer the skillet to the oven and bake for 15-20 minutes until the salmon flakes easily with a fork.
- While baking, whisk together lemon juice and olive oil for the sauce.
- Serve warm drizzled with lemon sauce.
