  • 6 oz dark chocolate (70% cocoa), chopped
  • 4 oz milk chocolate, chopped
  • 4 oz white chocolate, chopped
  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 4 large eggs, separated
  • 1 tsp pure vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1 tbsp gelatin powder

Instructions

  1. Melt dark, milk, and white chocolates in separate bowls using a double boiler; let cool slightly.
  2. Whip heavy cream until soft peaks form, gradually adding sugar until stiff peaks form.
  3. Gently fold melted dark chocolate into half of the whipped cream. Repeat with milk and white chocolate separately.
  4. Bloom gelatin in cold water for five minutes; mix into one layer of mousse while warm.
  5. Pour dark chocolate mousse into a prepared cake ring; refrigerate for 30 minutes. Add milk chocolate layer on top, refrigerate again, then add white chocolate layer.
  6. Chill overnight for best results and serve with fresh berries or whipped cream.
