- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 cup heavy whipping cream
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
- 2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter in a bowl until crumbly. Press into a 9-inch springform pan.
- Bake crust for 10 minutes until golden brown; let cool completely.
- In a large bowl, beat softened cream cheese until smooth. Add sugar and vanilla; mix well.
- Fold in sour cream until combined.
- Melt chocolate chips in the microwave, then cool slightly before adding to the mixture.
- Whip heavy cream to soft peaks and gently fold it into the cream cheese mixture.
- Stir in mini marshmallows, then spread filling over the cooled crust.
- Cover and refrigerate for at least four hours or overnight.
- Before serving, top with additional mini marshmallows and drizzle with melted chocolate.
