  • 2 cups water

  • 1 cup cherry tomatoes, halved

  • 2 tbsp lemon juice

  • Salt & pepper to taste

Instructions

  2. Reduce heat and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
  3. While quinoa cooks, chop bell peppers, cucumber, cherry tomatoes, and red onion into bite-sized pieces.
  4. In a large bowl, combine fluffed quinoa, chopped veggies, and herbs.
  5. Drizzle olive oil and lemon juice over the mixture; season with salt and pepper to taste.
  6. Toss gently until well combined. Chill in the fridge for at least 30 minutes before serving.
