- 3–4 boneless, skinless chicken breasts
- 8 oz fettuccine or penne pasta
- 1 cup sun-dried tomatoes (packed in oil)
- 4 cloves fresh garlic (minced)
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach or kale
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season chicken breasts and cook until golden brown on both sides (about 6-7 minutes per side). Remove from skillet and set aside.
- Add minced garlic and chopped sun-dried tomatoes to the skillet; sauté for 1-2 minutes until fragrant.
- Pour in heavy cream, scraping up any bits from the skillet. Stir in Parmesan cheese until melted and creamy.
