- 1 cup dry pinto beans
- 1 medium onion, finely chopped
- 4–5 garlic cloves, minced
- 3 cups low-sodium vegetable broth
- 1 tsp cumin powder
- 1 tsp chili powder (adjust to taste)
- Juice of 1 lime
- Optional: ¼ cup sour cream or Greek yogurt
Instructions
- Rinse the dry pinto beans under cold water and soak them overnight or quick soak by boiling for 1 hour.
- Set the Instant Pot to sauté mode. Heat a little oil and add chopped onions, cooking until translucent (about 3-5 minutes). Add minced garlic and sauté for another minute.
- Stir in the soaked pinto beans, vegetable broth, cumin powder, and chili powder until well combined.
- Seal the Instant Pot lid and cook on manual high pressure for 45 minutes. Allow natural pressure release for 10-15 minutes before opening.
- Mash the beans to your desired consistency using a potato masher or immersion blender. Stir in freshly squeezed lime juice and adjust seasoning if necessary.
