  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 bell peppers (red/yellow), diced
  • 2 cans (14.5 oz each) diced tomatoes
  • 4 cups vegetable broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp oregano
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent.
  2. Stir in minced garlic and diced bell peppers; cook until softened.
  3. Add cubed sweet potatoes, cumin, chili powder, oregano, salt, and pepper; mix well.
  4. Pour in canned tomatoes and vegetable broth; bring to a boil while stirring occasionally.
  5. Reduce heat to low, add rinsed black beans, and simmer for 20-25 minutes until sweet potatoes are tender.
