  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Prepare your veggies by chopping the onions, carrots, and celery into small pieces.
  2. In a skillet over medium heat, sauté the onions until translucent (about 5 minutes). Add minced garlic for the last minute.
  3. Layer the chicken breasts at the bottom of your slow cooker. Top with sautéed onions, carrots, celery, rice, thyme, parsley, salt, and pepper.
  4. Pour in the chicken broth until all ingredients are covered.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours.
