- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup long-grain white rice
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Prepare your veggies by chopping the onions, carrots, and celery into small pieces.
- In a skillet over medium heat, sauté the onions until translucent (about 5 minutes). Add minced garlic for the last minute.
