  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 cups kale or spinach
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent (about 5 minutes).
  2. Stir in garlic, carrots, and celery; cook for another 3-4 minutes until softened.
  3. Push veggies aside and add crumbled Italian sausage; brown until fully cooked.
  4. Pour in diced tomatoes and chicken broth; stir well and bring to a simmer.
  5. Add kale or spinach along with oregano, thyme, salt, and pepper just before serving.
